Love Soup


Don't you just love soups?

I do. That lovely broth, that lovely texture, that lovely warmth when you're cold and the refreshing feeling when you're hot. But most importantly - that pleasant feeling that you've just eaten something good for you and it was so yummy!

My friend Meg and I had a little afternoon together the other day and I was telling her about my recent Pinterest obsession and the inspiration I get there. So we decided to make a love soup - one that your eyes love and one that loves you - your taste buds and your health.


The inspiration for cutting the veggies is from this blog and she has got some brilliant ideas, some of which I am using this valentine's day!

So the soup: this makes enough for 3 people's lunch.



Ingredients:
vegetable stock
1 tbsp olive oil
1 large leek
2 garlic cloves
4 thick carrots
2 long potatoes
1 head of cauliflower
1/2 butternut squash
dill
salt 
pepper

Slice the leek, chop up the garlic, cut your carrots into heart-shapes (guide in the link above) and fry all of these on a medium heat until they release lovely fragrance. Pour over the stock, reduce the heat and let it simmer for about 5 minutes. Then add the butternut squash (you can cut it into hearts too! We just couldn't get a full one so had to get one that's already cut up) and let it simmer for another 10-15 minutes. Add the heart-shaped potatoes (we did them by cutting into long quarters and following the carrot guide) and branches of cauliflower and give it another 5 - 10 minutes or until all vegetables are soft and done. Sprinkle over some dill, salt and pepper and voila!

How easy was that???? Definitely not worth having canned soup instead.

It's lovely with some creme fraiche and some buttered bread. Also, you can change all the vegetables to ones that you prefer - it's really easy to adjust!

Maybe it's one for a non-guilty Valentine's day starter? ;]
